Step 1: Soak and Cook the Vanpayar

Wash the red cowpeas thoroughly and soak them overnight or for at least 6 hours.

Pressure cook the soaked vanpayar with enough water and a little salt for 3–4 whistles until soft but not mushy. Keep aside.

Proper soaking helps in better digestion and faster cooking.

Step 2: Prepare Coconut Paste

Grind the grated coconut with a little water into a smooth paste. This gives the curry authentic Kerala flavor and natural thickness.

Set aside.

Heat coconut oil in a deep pan.

Add mustard seeds and allow them to splutter. Then add curry leaves.

Add the cooked vanpayar along with some of its cooking water. Mix well and let it simmer for 5–7 minutes.

Now add the coconut paste and mix thoroughly. Adjust salt if required.

Simmer on low flame for another 5 minutes until the curry thickens.

Switch off the flame and let it rest for a few minutes before serving.
